SOURDOUGH 101: PART 2 (THE WATER)
Welcome to part 2 of Sourdough 101, today we are going to talk about the second most important ingredient of making a really good sourdough starter and how you use these two ingredients to create your starter.
So you must be wondering what is this oh so amazing second ingredient that is added to flour which makes you delicious bread. Well, its water. Yup, its just simple water but the quality of water you use also matters. I recommend that you always try using filtered or mineral water as hard tap water won't give you the wanted starter.
Now that you have you flour selected and your water, what do you do next?
You need to firstly take a clean jar add in an equal portion of flour and water, mix well anklet it sit overnight, in a warm area. Don't forget to lightly cover your jar. The next day discard all of your starter except 70 grams of it. Add the 70 grams in a clean jar and feed your starter with the same amount of water and flour you had added yesterday. Cover it again and let it sit for another 24 hours, repeat the same steps you did yesterday. These steps have be repeated for a total of 5 days, which is when your starter will reach its ripened stage.
Once you have reached day 5 and your starter is completely ready all you need to do is maintain it, which means that everyday you either need to dispose of half of your starter or use half of it and then feed it again with flour and water, make sure to do this everyday otherwise your starter may die.
If you by any chance are not able to feed your starter for a few days, keep it in the fridge.
Now you are completely ready to go ahead and make your own sourdough starter and enjoy some delicious bread.
